Banana Muffins

Banana Muffins

Serves: 12
  • 120g buckwheat flour
  • 30g tapioca flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 125g melted and cooled butter
  • 85g rapadura sugar
  • 3 eggs
  • 1 cup mashed banana
  • 1 tbsp vanilla
  • ½ cup chopped walnuts or sunflower seeds
  1. Preheat oven to 180 degrees celcius and place 12 large muffin cases into a tray
  2. Place all of the wet ingredients into a medium bowl and whisk together
  3. In a larger bowl mix the dry ingredients together and make a well in the centre
  4. Pour the wet ingredients into the dry and mix until combined
  5. Divide the mixture between the muffin cases
  6. Bake for 25 - 30 minutes
  7. Store in an air tight container or freeze for later
